    • Butter adds richness and prevents the eggs from sticking to the pan. Alternatively, you can swap it for Greek olive oil if you prefer.

    • Salt & Optional Black Pepper: Season with good quality sea salt or kosher salt for a clean taste. You can also add freshly cracked black pepper for a little extra flavour if you like a subtle kick.

    1. Whisk the eggs: Start by cracking 4 whole eggs into a small bowl. Then add a good pinch of salt, along with 3 tablespoons of full-fat Greek yogurt. Whisk everything together until the mixture is smooth, creating perfectly whisked eggs ready for cooking.

    1. Heat the pan: Place a non-stick pan on medium-low heat. Add ½ tablespoon of butter (or you can use Greek olive oil).
    2. Cook the eggs: Pour the egg mixture into the pan. Using a rubber/ silicone spatula or a wooden spoon, gently pull the eggs from the edges toward the center, stirring continuously to form soft curds. Keep cooking until you are happy with the consistency (for me its 1 minute). It will not take longer then 2-3 minutes until the eggs are creamy and just set. After that, turn off the heat and immediately transfer the scrambled eggs to a plate.
    3. Finish with oregano (optional): Finally, sprinkle a pinch of dried oregano on top, and optionally, add a little cracked black pepper for extra flavour.
