Ingredients
  

  • 4 eggs
  • salt to taste
  • 3 tablespoon Greek yogurt
  • ½ tablespoon Butter or olive oil
  • ¼ teaspoon oregano optional, for serving
  • black pepper optional, to taste, for serving

Instructions
 

  • Prep the eggs: In a small bowl, crack the eggs and season with salt. Add the Greek yogurt and use a fork to whisk everything until smooth and fully combined.
  • Heat the pan: Place a non-stick pan over medium-low heat. Add butter and let it melt, ensuring the pan is evenly coated.
  • Cook the eggs: Pour the egg mixture into the skillet and use a rubber or silicone spatula to continuously pull the eggs away from the edge toward the centre. Stir gently until the eggs form soft curds and are cooked to your desired doneness. Turn off the heat and immediately transfer the scrambled eggs to a plate.
  • Finish with oregano and pepper (optional): Finally, sprinkle a pinch of dried oregano on top, and, add a little cracked black pepper for extra flavour. Eat and enjoy!

Notes

  1. If the pan is too hot, the eggs will dry out, so keep the heat at medium-low.
  2. The eggs will continue cooking once the pan is turned off, so remove them from the pan straight away to avoid overcooking.
  3. Cooking time varies depending on how well done you want your eggs, but it won’t take more than 3 minutes in total.
