Ingredients For Syrup
4x cups water
2x cups sugar
½ cup honey
2x cinnamon sticks
½ whole lemon juice
Ingredients For Dough
½ cup warm water
1 tablespoon dry yeast
1 teaspoon sugar
6x cups plain flour
1 teaspoon salt
4x cups water
½ small lemon juice
1 teaspoon olive oil
To Fry
Sunflower oil – amount depending on dish size but you want the balls to be submerged.
Garnish
Honey
Cinnamon ground
Crushed walnuts
Process
- Combine all syrup ingredients to a saucepan and bring to a boil. After a couple of minutes, turn off and set aside to cool down.
- Begin the yeast mixture by adding to half a cup of warm water, the yeast and sugar. Mix together and set aside.
- Begin dough by adding to a bowl the flour, salt, oil, lemon, and water. Then add the yeast mixture and blend until silky smooth.
- Set aside for one hour in a warm location.
- After the hour, heat up the oil. Tip: add a bamboo skewer to the oil and if it bubbles, it’s ready.
- Create balls by placing your hand in the dough and squeezing it out the top between the gap of your thumb and index finger.
- Scoop the top off with an oiled spoon to create a nice ball shape. Place in oil and repeat.
- Once cooked, place on kitchen paper to drain excess oil and then add the hot balls immediately into the cooled syrup for 10 seconds. Then take out and place on a drip tray.
- Finally add some extra honey (optional), sprinkle some cinnamon and crushed walnuts.
