Ingredients
  

Cake Batter

  • 1 cup Greek yogurt
  • 3 eggs
  • 150 ml unsalted butter melted
  • 1 tablespoon vanilla
  • 1 tablespoon brandy
  • 300 grams plain flour
  • 200 grams sugar
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 1 teaspoon baking powder
  • 150 grams walnuts chopped
  • 2 apples diced

Garnish

  • 2 apples sliced
  • 1 lemon juiced
  • 50 grams unsalted butter
  • 50 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon Icing sugar to sprinkle

Instructions
 

Cake Batter

  • Peel and dice the apples, then set aside.
  • In one bowl, mix all the dry ingredients: flour, sugar, cinnamon, cloves, baking powder, and chopped walnuts.
  • In a separate bowl, mix all the wet ingredients: yogurt, eggs, melted butter, vanilla, and brandy.
  • Combine the dry ingredients with the wet ingredients, mixing until a thick batter forms.
  • Fold in the diced apples, ensuring they are evenly distributed.
  • Butter a 24cm round cake pan and sprinkle it with a little flour.
  • Pour the batter into the pan, pressing it down to ensure it is evenly spread.

Garnish And Cooking

  • Preheat your oven to 170°C (fan-forced).
  • Peel and slice the apples to your desired thickness, then place them in a bowl.
  • Squeeze the lemon juice over the apple slices, mixing to prevent browning.
  • In a saucepan over medium heat, melt the butter with the brown sugar and ground cinnamon, stirring until dissolved.
  • Turn off the heat.
  • Arrange the sliced apples on top of the cake batter.
  • Pour the glaze over the apples. It doesn’t need to be evenly spread.
  • Bake in the oven for approximately 1 hour. Check for doneness with a toothpick; it should come out clean.
  • Once cooked, let the cake cool.
  • Once cooled, sprinkle with icing sugar.
  • Serve and enjoy!
