Fasolakia Recipe (Greek Green Beans with Potatoes)

This fasolakia recipe is a simple, flavourful Greek green bean stew with potatoes, fresh tomatoes, and plenty of extra virgin olive oil.

Ingredients
  

  • ½ cup Olive oil
  • 1 Large onion diced
  • 5 Garlic cloves minced
  • 1 Small red chilli diced (optional)
  • 2 tablespoon Tomato paste
  • 1 Fresh parsley bunch (small) chopped
  • 10 Baby potatoes peeled and halved
  • 400 grams Crushed tomatoes
  • 1 tablespoon Salt
  • ½ teaspoon Black pepper
  • 500 ml Vegetable stock
  • 500 grams Green string beans tips and tails trimmed

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, then sauté for 2 minutes until fragrant.
  • Stir in the tomato paste, red chilli, and parsley, mixing well.
  • Add the potatoes, salt, pepper, and crushed tomatoes, stirring to coat everything evenly.
  • Pour in the vegetable stock, bring to a boil, then reduce the heat to low-medium. Cover and simmer for 10-15 minutes.
  • Stir in the green beans, cover again, and continue cooking for another 10 minutes.
  • Remove the lid and cook uncovered for a further 10 minutes until the potatoes are soft and the liquid has slightly reduced.
  • Turn off the heat and let the dish rest for a few minutes before serving.

Notes

  1. Potato size: I use baby potatoes, so when halved, they cook quickly. If using larger potatoes, cut them into smaller pieces (quarters) to ensure they soften properly.
  2. Check for doneness: Cooking time may vary depending on your potatoes. Before serving, test a piece to make sure it’s as soft as you like. If needed, simmer for a few extra minutes.
  3. Serving suggestion: Enjoy with crusty bread and a generous crumble of Greek feta cheese on top.
