Fasolada Recipe (Greek Bean Soup)

Ingredients
  

  • 500 grams white beans Great Northern or Cannellini
  • 3 celery sticks sliced
  • 3 carrots sliced
  • 1 brown onion medium diced
  • 1 red onion medium diced
  • 5 garlic cloves sliced
  • 1 tablespoon tomato paste
  • 1 cup olive oil plus a little extra for frying
  • 400 grams crushed tomatoes
  • 1 teaspoon oregano
  • ½ tablespoon salt
  • ½ teaspoon pepper
  • 3 bay leaves

Instructions
 

Prepare and Cook the Beans

  • Soak the beans in water for about 12 hours.
  • After soaking, rinse the beans under fresh water and place them in a saucepan. Cover with water and bring to a boil for 10 minutes.
  • While the beans are boiling, slice the celery and carrots into medium thickness. Dice the brown and red onions into medium pieces. Slice the garlic cloves.
  • After boiling for 10 minutes, remove the beans from heat and drain them.

Sauté Vegetables and Simmer the Soup

  • In a pot, heat a little olive oil over medium heat. Add the sliced garlic and diced onions. Sauté until the onions are translucent.
  • Add the tomato paste and mix well. Then, add the sliced carrots and celery, stirring to combine.
  • Add the drained, pre-boiled beans to the pot. Pour in half a cup of olive oil, crushed tomatoes, oregano, pepper, and bay leaves. Fill the pot with water until all ingredients are covered.
  • Bring to a boil, then reduce heat and let it simmer for 1.5 hours.
  • After 1.5 hours, add the remaining half cup of olive oil and salt. Adjust the seasoning to taste. Let it simmer for an additional 10 minutes.
  • Taste a to ensure it's fully cooked.

Optional Garnish

  • Serve with hot chilli flakes, fresh parsley, fresh red onion, and bread.
  • Enjoy!
