In a pot, heat a little olive oil over medium heat. Add the sliced garlic and diced onions. Sauté until the onions are translucent.
Add the tomato paste and mix well. Then, add the sliced carrots and celery, stirring to combine.
Add the drained, pre-boiled beans to the pot. Pour in half a cup of olive oil, crushed tomatoes, oregano, pepper, and bay leaves. Fill the pot with water until all ingredients are covered.
Bring to a boil, then reduce heat and let it simmer for 1.5 hours.
After 1.5 hours, add the remaining half cup of olive oil and salt. Adjust the seasoning to taste. Let it simmer for an additional 10 minutes.
