Custard
- 1 litre milk
- 100 grams semolina (fine)
- 40 grams corn starch
- 150 grams sugar (200 grams if you like it sweeter)
- 3 eggs (medium)
- 1 teaspoon vanilla extract
- 1 small lemon (zest + juice)
- ¼ teaspoon salt (pinch of salt)
- 70 grams butter (unsalted)
Coating
- 1 egg
- 1 tablespoon water
- 2 tablespoon sugar
- ½ teaspoon vanilla extract
