Ingredients
900g Greek Yoghurt (I like Procal brand)
2x cucumbers
Garlic cloves (add as much to your liking)
1 teaspoon salt
½ teaspoon black pepper ground
1 whole lemon (juiced)
Optional Extras/Amendments
Vinegar instead of lemon juice
Dill
Olive oil
Instructions
- Drain yoghurt overnight in a cheese cloth. This makes the tzatziki thick and creamy. (If you prefer a runnier tzatziki, no need to drain).
- Slice the cucumbers in half and scoop out the soft seeded centre. Then grate the remains of the cucumber. Place the grated cucumber in a cheese cloth and squeeze out all the juices. Add to the drained yoghurt.
- Mince your garlic cloves to the drained yogurt.
- Add your salt, pepper, and lemon juice.
- Mix thoroughly and enjoy!
