Ingredients For Dough
250g unsalted butter (room temperature)
1x cup olive oil
1x cup orange juice
50ml ouzo
50ml cognac
¼ teaspoon salt
1x teaspoon vanilla sugar
1x teaspoon baking powder
1x teaspoon ground cinnamon
½ teaspoon ground cloves
1x cup white sugar
5-7 cups self-raising flour (sifted)
Ingredients For Syrup
3x cups of water
1 & ½ cups sugar
1x cinnamon stick
5x cloves whole
½ lemon (juiced)
1x cup of honey
Ingredients For Nut Mixture
3x cups walnuts (whole)
1x teaspoon ground cinnamon
½ teaspoon ground cloves
Process
- Add the butter, oil, orange juice, cognac and ouzo to a bowl and mix all together until combined.
- Then add the salt, vanilla sugar, baking powder, cinnamon ground, cloves ground and sugar to the bowl.
- Sieve your flour and add two cups and start mixing. Once all mixed, slowly add cup by cup of flour until you get the doughy consistency required.
- Once the dough is ready. Preheat the oven to 170° and start forming your biscuits. I used roughly 40g per biscuit.
- Place into the oven and cook until golden brown (for about 20-25 minutes).
- Toast the whole walnuts and put aside to cool down.
- Start the syrup by adding the water, sugar, cinnamon, cloves, and lemon – bring to boil then turn it off and add the cup of honey. Set aside.
- The biscuits should be ready by now, take them out the oven and let them cook down.
- Crush the walnuts once cooled, to a fine consistency and add the cinnamon and cloves then mix thoroughly.
- Once biscuits are cooked, add the syrup back to the heat but only slightly to warm it up. We don’t want it too hot.
- Add in the cooled biscuits to the warm syrup and place into a rack to drip the excess syrup off.
- Then add the syrup coated biscuit to the walnut mix to lightly coat.
- Keep repeating step 11 and 12 until all biscuits are done.
