- Arborio rice: Traditionally, Greek rice pudding (known as "Rizogalo") is made using short-grain rice like Arborio. Arborio rice has a high starch content that helps create a creamy texture in the pudding.
- Milk + water: The combination of milk and water is used to cook the rice. Full-cream milk adds richness and creaminess to the pudding. Guys, this is not a low-fat moment. I recommend using full cream over low-fat milk.
- Sugar: Typically, white granulated sugar is used to sweeten the rice pudding. Adjust the amount of sugar based on your sweetness preference. Some recipes may use alternatives like honey or agave syrup for sweetness.
- Cinnamon stick: A cinnamon stick is used to infuse the rice pudding with a warm and aromatic flavour. It's added during the cooking process and then removed before serving.
- Thickened cream: Adding a bit of thickened cream towards the end of cooking or after the pudding is removed from heat can enhance the richness and creaminess of the dessert.
- Vanilla essence: Vanilla essence or extract is often used to flavour the rice pudding, providing a pleasant aroma and taste. Some Greek recipes might use a whole vanilla bean or vanilla extract.
- Ground cinnamon (for dusting): Ground cinnamon is a common garnish for Greek rice pudding. A light dusting of ground cinnamon on top of the individual servings adds a finishing touch and a little more flavour.
Top tips for making the best Greek rice pudding
- Choose the right rice: Use Arborio rice for the creamiest and most authentic Greek rice pudding. Its high starch content will help get that velvety, unctuous texture.
- Rinse the rice: Before cooking, rinse the rice under cold water to remove excess starch. This helps prevent the pudding from becoming overly sticky.
- Stir constantly: Stir the rice mixture frequently while it’s cooking to prevent it from sticking to the bottom of the pot and to ensure even cooking.
- Gradually add sugar: Add the sugar gradually, tasting as you go. You can adjust the sweetness to your liking, but try not to make it overly sweet. This is a top tip from me if you want to be able to control the sweetness.
- Cook it to the right consistency: Be patient and cook the pudding until it reaches the desired consistency. It should be thick and creamy but still have a slight flow.
- Remove cinnamon stick: Remember to remove the cinnamon stick before serving the pudding. Leaving it in could make the pudding too spicy. Please don’t use your fingers like I did in my video, yikes!

How to serve this Rizogalo recipe
I like to serve this dessert after a classic Greek meal like this fasolada (Greek bean soup). It's delicious served as is or with some cooked (chilled) fruit) or a flavoured syrup on the side.
Your Greek rice pudding can be served either warm or chilled. As a Greek chap, I can tell you that serving it chilled during summer and warm in colder seasons is common.
Use individual dessert dishes or ramekins to portion out the Rizogalo. This not only makes for an elegant presentation but also allows for easy serving.
Why not serve your Greek rice pudding with a side of fresh fruit like berries or sliced strawberries? A few fresh mint leaves as a garnish is an easy way to pretty up your Rizogalo.
Variations and Flavor add-ins
- Citrus flavours: Try using orange zest or a combination of citrus zest for a vibrant, citrusy taste. If I go in this flavour direction, I usually leave out the cinnamon and just stick to citrus as the main flavour. You can top your Rizogalo recipe with caramelized orange slices or candied orange peel.
- Spices: Experiment with spices like nutmeg, cardamom, or a pinch of cloves. Just go easy with the quantities, as these spices can be potent.
- Nuts: Toasted almonds, pistachios, or chopped walnuts can add a good crunch and nutty flavour to the creamy Greek rice pudding. Sprinkle them on top just before serving.
- Dried fruits: Raisins, chopped dates, or dried cranberries can be added to the pudding. These give the dessert some chewiness and extra sweetness.
- Floral taste: A splash of rose or orange blossom water for a floral note to the pudding. Add it sparingly and adjust to taste.
- Honey: Instead of or in addition to sugar, sweeten your rice pudding with honey. Drizzle a bit of honey over the top just before serving for extra sweetness and flavour. This can be done with agave or maple syrup as well.
- Coconut milk: Use a mixture of coconut milk and regular milk if you like – you could toast some coconut shavings to garnish with.
- Caramelized sugar or Brulé: Sprinkle some sugar on top of the chilled rice pudding and use a kitchen torch to caramelize it, creating a crispy, caramelized layer. How good does that sound, mate?!
- Chocolate: Stir in some chocolate chips or finely chopped chocolate towards the end of cooking. You could also mix some cocoa powder with some of the milk and at it at the beginning.
- Liqueur: For a grown-up twist, add a splash of liqueur such as amaretto, rum, or brandy to infuse the pudding with a hint of your preferred spirit. Add it in towards the end of cooking.
Which rice is best in this recipe for Rizogalo?
The best rice to use in a Greek rice pudding recipe is often Arborio rice or another medium-grain rice variety. Arborio rice is a short-grain Italian rice.
Here's why Arborio rice is a good choice:
- High starch content: Arborio rice has a high starch content and contains a lot of amylopectin, a type of starch that is released during cooking and helps to create a creamy texture in the pudding.
- Creaminess: The creamy texture in rice pudding comes from the starch released during cooking. Medium-grain rice varieties like Arborio tend to absorb liquid well while releasing starch, resulting in a thicker and creamier consistency.
- Absorption: Arborio rice absorbs liquid slowly. This allows it to cook evenly and absorb the flavours of the milk, sugar, and other ingredients in the pudding.
- Widely available: Arborio rice is easily accessible in many grocery stores. It is a popular choice for making creamy dishes like risotto and rice pudding due to its texture and starch content.
While Arborio rice is the preferred choice for my Greek rice pudding, other medium-grain rice varieties like Carnaroli or Valencia rice can also be used as alternatives.
These varieties share similar characteristics with Arborio rice in terms of starch content and ability to create a creamy consistency when cooked.
